Vinification:
The 100% Fernão Pires grapes are hand-harvested and subjected to spontaneous fermentation without temperature control. Fermentation begins in skin tanks and the wine is then bottled while fermenting, allowing for natural secondary effervescence without the addition of sugars or yeast (ancestral method — Pet Nat).
