VINIFICATION<\/span><\/span>
The Fe<\/span>rn\u00e3o Pires grapes are manually harvested<\/span> from<\/span> a 40<\/span>–<\/span>year<\/span>–<\/span>old <\/span>vine<\/span>yard<\/span> and transported to t<\/span>he winery in plastic crates of 4<\/span>00 kg. The <\/span> Sauvignon Blanc<\/span> grape<\/span>s are machine harvested<\/span> from<\/span> a<\/span> 12<\/span>–<\/span>year<\/span>–<\/span>old <\/span>vineyard. <\/span> <\/span><\/span>All the grapes are<\/span> destemmed<\/span> and<\/span> partially<\/span> crushed. They then go to a <\/span> pneumatic (bladder)<\/span> press to be pressed in an oxygen<\/span>–<\/span>free <\/span>environment.<\/span> Fermentation is done in<\/span> concrete vats lined with epoxy<\/span> at <\/span>controlled temperatures between 12\u00ba<\/span>C<\/span> and 14\u00baC.<\/span><\/span><\/span>
